The influence of barrels on single malt whisky - studying it is Billy Walker's life's work. The luminary can devote himself to the phenomenon in particular in the Wood Finish Series, launched in 2019. The series consists of innovative single malt bottlings with various maturations, which are clearly influenced by selected barrels. For this, Billy Walker secures puncheons, pipes and co. from small producers around the world. For the new Batch 3 of the Wood Finish Series, he refined GlenAllachie single malt in sherry, port wine and Madeira barrels.
Walker let his GlenAllachie 11 yo – Pedro Ximénez Sherry Wood Finish rest in American white oak barrels for more than nine years before the mahogany-coloured single malt was transferred to Pedro Ximénez Sherry Puncheons for a sweet, fruity finish.
The barrel expert used pipes pre-filled with the fruity ruby port wine for the final finishing of GlenAllachie 12 yo – Ruby Port Wood Finish . After ten years in American oak barrels, the Scotch developed its bright color and complex aromas.
The GlenAllachie 13 yo - Madeira Wood Finish balances sweetness and spice. This is thanks to more than eleven years in American oak barrels and the finish in Madeira barriques. The Portuguese casks were pre-filled with a particularly intense variety of liqueur wine made from Malvasia grapes.
