Amaras Espadin Joven Mezcal
Special features: This mezcal is made from 100% Espadín agave, which is harvested after a minimum of ten years of maturation in the mountains of Oaxaca. After harvesting, the agave hearts are cooked in earthen ovens to convert the sugars into simple sugars. This is followed by fermentation in pine wood containers, and then a double distillation process. Sustainability is a priority at Amaras: For every agave harvested, an average of seven new ones are planted.
