This Australian rum from The Rum Trail combines tropical and continental maturation. Distilled in 2007, it first spent ten years in American oak in Australia, followed by a further seven years in second-fill bourbon casks in Great Britain. This second stage continues the maturation rather than merely providing a short finish. Elixir Distillers bottled the rum in 2025 at 48%, with a release of 450 bottles.

Production begins with a long fermentation using a proprietary yeast strain, which encourages the pronounced fruity character. An initial distillation in a column still is followed by a second distillation in a copper pot still. This sequence contributes to the oily mouthfeel. Alongside ripe banana and sultanas, there are notes of eucalyptus, mint and blackberry jam. The rum contains neither added sugar nor caramel colouring and is not chill-filtered.

A yellow label illustrated with green birds distinguishes this small-batch bottling. The bottle contains 0.7 litres and is offered without gift packaging.

Tasting Notes:

• Nose: Banana notes mingle with a distinctly diesel-like note on the nose. Raisins and currants add to the aroma.
• Palate: The rum is dense and full-bodied on the palate, with an oily texture. Alcohol-soaked sultanas and baked, overripe bananas define the flavour, joined by condensed milk, dried mango and dried mint.
• Finish: The sensation on the tongue becomes drier on the finish. Mint, tarragon and sun-dried tropical fruits linger.

Distillery/Bottler:

The rum comes from Australia's oldest licensed rum distillery, on the coast of Queensland. Elixir Distillers is responsible for selection, further maturation and bottling. Behind The Elixir Trails are Sukhinder Singh and his team, who select spirits from different origins and put their individual production methods at the heart of the range.

For The Rum Trail, the balance between maturation in the country of origin and further ageing in Europe plays a central role. The team uses its Scottish warehouses to develop selected rums further without masking their regional character with particularly intense finishing casks. Its approach also includes gradually reducing the rum to drinking strength, allowing the added water to integrate with the spirit.
