Special Features:

A finish in Pedro Ximénez Sherry Butts complements this Balvenie's long maturation in American oak. The whisky first spends 18 years in traditional American oak barrels, developing honey and vanilla notes. It then matures for several months in butts that previously held Pedro Ximénez sherry. This second maturation adds fruit, spice and a syrupy mouthfeel.

This non-smoky single malt is bottled at 48.7% in a 0.7-litre bottle and comes in a gift tube. It is non-chill filtered and contains no colouring. Alongside fig jam, there are also notes of berry jam.

Tasting Notes:

• Nose: Lavender, mandarin and ripe figs mingle with honey and vanilla on the nose. A restrained clove note adds to the aromas.
• Palate: Fig jam and candied fruit define the intense flavour. The mouthfeel is syrupy, with creamy vanilla. Delicate clove spice and a trace of oak round out the palate.
• Finish: Vanilla and dark fruit linger in a long finish. A light oak dryness provides a drier counterpoint.

Distillery/Bottler:

Founded in 1892, The Balvenie is located in Dufftown in Scotland's Speyside region. The distillery preserves five interconnected crafts: growing its own barley, traditional floor malting, coopering, coppersmithing and the Malt Master's work with casks. Processing the grain and maintaining the stills and casks are thus all part of the craftsmanship behind its whiskies.

David C. Stewart MBE selected former PX sherry butts for the Pedro Ximénez Cask. Here, his work with casks that previously held different drinks brings together the honey and vanilla notes of the initial maturation and the fruity, spicy influence of the sherry finish.
