Special Features:

This Canadian rye combines rye and malted barley with a finishing period in port wine casks. Dunrobin Distilleries and Seven Seals Innovation developed Beaver's Dram together. The 0.7-litre version is bottled at 46% without added colouring. Fruity, sweet and spicy impressions meet notes of wood and smoke.

The patented Stockhausen method is used to refine the whisky. Developed by Dr. Dolf Stockhausen, this process optimises contact between whisky and wood. It accelerates the development of cask-derived flavours and reduces unwanted harshness and tannins, allowing the whisky to become smoother in less time.

Tasting Notes:

• Nose: The nose offers creamy nougat alongside orange and walnut. Charcoal and a little white pepper complete the aroma.
• Palate: Candied ginger and hickory wood bring spicy accents to the palate. These are followed by red berries, orange, fresh mint and caramel.
• Finish: Vanilla and port wine remain present in the finish, accompanied by delicate wood smoke and buttery toffee.

Distillery/Bottler:

Dunrobin Distilleries is located in eastern Ontario. In 2016, Adrian Spitzer and Mark Watson began putting their idea for a distillery in the Ottawa region into practice. The following year, they converted a garage on Watson's farm into an experimental laboratory, where Spitzer developed the first spirits using a small still. Dunrobin Distilleries Limited was incorporated in 2018. Since acquiring Beau’s former production facility in Vankleek Hill in 2022, the distillery has been based there.

Switzerland's Seven Seals Innovation became a major investor in and partner of Dunrobin in 2022. The collaboration brings together Dunrobin's distilling experience and Seven Seals' maturation technology; the companies jointly test grain recipes, yeast strains and maturation processes. This partnership led to the creation of Beaver's Dram in 2023. Seven Seals contributed the patented Stockhausen method to the refinement of the whiskies.
