Production begins with Guatemalan molasses, which is fermented and distilled. The rum then matures in Kinsale, first in classic casks, and then undergoes further refinement in bourbon casks that previously housed single malt whiskey. This careful cask aging helped the rum win a gold medal at the 2020 World Rum Awards.
