PALENQUEROS Mexicano Onofre Ortiz (Mezcal)
Special features: This mezcal is produced by Onofre Ortiz, a fifth-generation palenquero from Bramaderos, Miahuatlán, Oaxaca, using traditional craftsmanship. The Mexicano agave is roasted in an 11-ton earth oven and then crushed with a mesquite wood hammer in a stone trough. Fermentation takes place over seven days in pine wood barrels with natural yeasts, followed by a double distillation in 350-liter copper pot stills. The mezcal is bottled at 47.9% alcohol content, with no additives or coloring.
