Special Features:

A rum cask finish follows this single malt’s maturation in first-fill bourbon casks. West Cork uses rum casks from Consorcio Licorero Nacional for this finishing stage. The bottling belongs to the Cask Finish range, which combines different previous cask contents with a shared foundation of bourbon cask maturation and triple distillation.

West Cork makes the whiskey in small batches entirely from malted barley. The range uses Irish barley and water from Mullaghmesha. Rum Cask Finish combines sweet aromas with roasted flavours and a dry finish. It is bottled at 43% in bottles containing 0.7 litres, without chill filtration or added colour.

Tasting Notes:

• Nose: Honey, vanilla, caramel and chocolate come together on the nose. Subtle notes of fresh and dried fruit complement the aromas.
• Palate: Roasted notes of coffee, toast and chocolate define the palate.
• Finish: The whiskey has a short, dry finish.

Distillery/Bottler:

West Cork Distillers was founded in 2003 by childhood friends John O’Connell, Ger McCarthy and Denis McCarthy. The first distillations took place in a room behind Denis’ house in Union Hall, using two small stills the company had bought from a Swiss schnapps producer. In 2014, the distillery moved to Skibbereen.

As the business grew, the team designed some of its own production systems and built the equipment it needed by hand. In 2020, West Cork opened its Marsh Road site in Skibbereen. Alongside the distillation equipment, the site houses warehouses and bottling facilities, keeping distillation, maturation and bottling together on its own premises.
