Special Features:

Maturation entirely in a tropical climate in virgin oak shapes this Yaku Wari from Ecuador’s Manabí province. The rum is made from sugarcane juice and distilled twice in a pot still. After seven years, it is bottled from single cask 45 at its cask strength of 49%, without additives or chill filtration.

The rum was distilled in 2015 and bottled in Poland in 2023. Its vanilla-led aromatic profile combines dried fruit with caramel and a distinctly estery accent. The bottles are individually numbered, with a white fish motif and handwritten cask and strength details defining their appearance.

Tasting Notes:

• Nose: The nose is dense, with plenty of vanilla alongside dried figs, raisins, caramel and burnt sugar. A little spice and a distinctly estery, glue-like note add to the aroma, while the alcohol remains restrained.
• Palate: Vanilla remains prominent on the palate, accompanied by dried apricots and figs, along with a little sherry. Slightly burnt caramel briefly introduces a delicate bitterness. Estery notes are also present, though less pronounced than on the nose.
• Finish: Vanilla and honey linger through the medium-length finish.

Distillery/Bottler:

Yaku Wari means “untamed water” in Quechua. The brand centres on rum from Manabí, a province on Ecuador’s coast. Production begins with sugarcane juice fermenting for eight to nine days, followed by pot still distillation. The brand’s first series consists of seven-year-old single-cask bottlings.

The rum is bottled in the European Union, while production of the spirit and its entire tropical maturation take place in Ecuador.
