Description
Yaku Wari is a 100% artisanal pot-still rum from Ecuador's coastal province of Manabi. Distilled on a private hacienda whose distilling operations have ceased, only 60 virgin oak barrels of the brand exist. These are gradually bottled at cask strength in the EU – without blending, additives of any kind, or chill-filtering – to preserve the rum's original, luscious profile. This process is entirely in keeping with its name: Yaku Wari means "untamed waters" in the indigenous Quechua language.
The Yaku Wari 9 yo – Cask No. 24 was produced in 2015 from Ecuadorian sugarcane juice. Fermentation lasted eight to nine days, followed by two distillations in an alembic still. The rum was then aged in virgin oak at an average alcohol content of 60% ABV and with a high degree of evaporation, before being finally aged in a mystery cask. The result? A rare experience with a deep, expressive, and yet refined profile.
