Yamazaki 12 brings together malt whiskies matured in different ways at the same distillery. The composition marries whiskies aged in American and Spanish oak with those aged in Japanese Mizunara oak. Maturation in American white oak contributes vanilla and ripe fruit to the aroma, while the other oak types complement the cask selection.

This twelve-year-old single malt is bottled at 43% alcohol. The bottle contains 0.7 litres and comes in gift packaging. Yamazaki 12 meets the Japan Spirits & Liqueurs Makers Association standards for Japanese whisky.

A subtle smoky nuance complements the fruity character. Adding a few drops of water gradually brings it further forward: oak and vanilla sweetness give way first to spicy and gently tart impressions, before the smoke becomes more pronounced.

Tasting Notes:

• Nose: Peach and pineapple mingle with grapefruit and candied orange on the nose. Vanilla, cloves and notes of Mizunara oak complement the fruit. A light smoky note is also perceptible.
• Palate: Coconut and cranberry meet a buttery impression on the palate.
• Finish: The long finish reveals gently sweet ginger notes and cinnamon.

Distillery/Bottler:

The Yamazaki Distillery lies southwest of Kyoto at the foot of Tennozan. Shinjiro Torii commissioned the construction of Japan’s first malt whisky distillery here in 1923; distillation began in 1924. Soft water and natural maturation conditions were decisive in choosing the location. The Katsura, Uji and Kizu rivers converge nearby. Their misty valley, together with changing temperatures and humidity, shapes the environment in which the casks are stored.

Suntory’s approach includes producing different malt whiskies within a single distillery and bringing them together later. Yamazaki has had a small experimental distillery since 1968 to explore this diversity. Production methods and distillation techniques are studied there. The Yamazaki brand was launched in 1984; the distillery belongs to Suntory Spirits Limited.
