Raspberries from Perthshire give this gin liqueur its fruity core. The berries are steeped in Edinburgh Gin and sweetened with cane sugar. Edinburgh Classic Gin provides the base; the natural raspberry flavour combines pronounced sweetness with fruity acidity, recalling raspberry jam.

Raspberry Gin Liqueur was launched in 2011 as Edinburgh Gin's first gin liqueur. It is made in small batches, bottled at 20% alcohol and offered in a bottle containing 0.5 litres.

The liqueur can be enjoyed over ice or with soda water or lemonade. Combined with dry sparkling wine, it makes a fruity aperitif, with a fresh raspberry as a suitable garnish.

Tasting Notes:

• Nose: Red berries lead on the nose, accompanied by the sweetness of ripe fruit.
• Palate: The liqueur feels syrupy and intensely fruity on the palate. Red berries define the flavour.
• Finish: The finish is rounded and retains a distinct raspberry character.

Distillery/Bottler:

Alex and Jane Nicol founded Edinburgh Gin in 2010, initially selling their gin from a van at local garden shows. At Rutland Place, the distillery worked with two small stills, Flora and Caledonia. Growing demand led to a second site opening in Leith in 2016. Production moved there, while Rutland Place was used mainly for smaller batches and experiments.

Today, Edinburgh Gin Distillery is located at The Arches in Edinburgh's Old Town. For its London Dry gins, the distillery combines two methods: juniper and coriander are distilled in the copper pot still, while lighter botanicals release their aromas into the alcohol vapour. The current site houses two large copper stills, Lina and Annie, alongside the smaller experimental still, Matilda. Tours and gin-making classes also give visitors an insight into working with botanicals.
