The Dubliner Honeycomb brings together Irish whiskey and the sweet flavours of honeycomb and caramel. Its recipe combines triple-distilled Irish whiskey with these dessert-like notes to create a silky-smooth liqueur. It is made in Ireland and bottled at 30% alcohol.

Alongside the honey and caramel sweetness, vanilla and dry oak notes emerge. The liqueur can be enjoyed neat or over ice and also works in cocktails. One option is the Dublin Mule, in which ginger beer and lime juice complement the sweet whiskey base.

Tasting Notes:

• Nose: The nose reveals honeycomb, light, crisp caramel and vanilla, together with a note reminiscent of sweet vanilla soda. Caramel, toffee and butterscotch round out the aromas.
• Palate: On the palate, honey and caramel combine with gentle vanilla spice.
• Finish: The long finish remains sweet and fades with pronounced smoothness.

Distillery/Bottler:

The Dubliner is part of the Dublin Liberties Distillery portfolio, based in Dublin’s historic distilling district, The Liberties. Opened in 2019, the distillery occupies an 18th-century building that was initially used as a mill and later as a tannery. The site thus connects present-day whiskey production with the district’s industrial history.

For its own distillation, the distillery uses Irish malt and water from its own well. It employs a three-stage distillation process using a wash still, an intermediate still and a spirit still. Its equipment includes heat recovery, while spent grain and distillation residues are returned to local farms as animal feed.
