Its profile ranges from dried fruit, caramel, orange peel and dark chocolate to ripe plum, juicy red fruit and spices. Dark fruit and cocoa linger through the long finish.

The idea for Lark Distillery emerged in 1989. Bill and Lyn Lark subsequently campaigned to have the distilling laws amended, and in 1992 it became the first Australian distillery in 154 years to resume the production of single malt spirit.

Berry Bros. & Rudd has been in business since 1698 and remains family-run on St James’s Street in London. The company’s oldest surviving own-label Scotch cask bottling dates from 1853, attesting to its long history as an independent bottler.
