This Irish Single Grain initially matures for more than three years in a flame-charred bourbon cask before being finished in an XO Calvados cask from Normandy. The cask had previously held apple brandy for more than six years.

The result combines a light, floral profile with vanilla, honey and light fruit. Butterscotch, toffee and stewed orchard fruit contribute a soft caramel sweetness, while pepper, cinnamon and oak spice provide a spicy counterpoint.

Tasting Notes:

• Nose: The whiskey is light and floral on the nose, led by vanilla, honey and light fruit.
• Palate: On the palate, butterscotch and toffee combine with stewed apple, pear and honey. Cinnamon, pepper and spice from French oak add spicy accents.
• Finish: The finish is long, with fruit, green apple peel and woody spice notes.

Distillery/Bottler:

Founded in 2011, Glendalough Distillery is based in County Wicklow. American white oak provides the foundation for maturation in its whiskey range, after which the whiskeys are finished in a second and sometimes even a third cask made from selected wood types.

Glendalough's Single Cask range centres on the careful selection of distinctive casks. For this expression, Glendalough pairs Single Grain matured for more than three years in a bourbon cask with a French XO Calvados cask.
