Glen Scotia's surviving historic features include the mash tun, stillhouse and a traditional dunnage warehouse. The distillery produces both peated and unpeated whiskies and sources Scottish malted barley to its own specifications rather than malting it on site.

Glen Scotia uses a Robert Bobby mill dating from 1956 and a Victorian cast-iron mash tun. The water for mashing comes from Crosshill Loch. Fermentation lasts more than 70 hours, followed by slow double distillation in copper pot stills to develop flavour and an oily character. Palletised, racked and dunnage warehouses are available on site for maturation. Bottling and labelling take place at the sister distillery near Loch Lomond.
