Sugarcane juice is central to Clairin Sajous: for the bottling from the 2023 harvest, Michel Sajous processes sugarcane grown on his own 30 hectares of land. The rum remains unaged, with no influence from maturation in wooden casks.

The local Cristalline sugarcane variety is grown without artificial fertilisers or pesticides and harvested by hand. Its pure juice ferments slowly with naturally occurring yeasts. Following artisanal distillation, the Clairin is bottled without filtration. It contains no colouring and is bottled at 55.2% in a 0.7-litre bottle with gift packaging.

Tasting Notes:

• Nose: On the nose, fresh sugarcane juice, green apple and herbs mingle with earthy notes. A light floral hint complements the aroma.
• Palate: The Clairin feels rich and full on the palate. Pronounced notes of fresh sugarcane juice and citrus are accompanied by a slightly salty hint.
• Finish: The long, layered finish brings sweet and earthy impressions together in a balanced way.

Distillery/Bottler:

Michel Sajous produces his Clairin at Distillerie Chelo near Saint-Michel-de-l’Attalaye, north of Port-au-Prince. He built the distillery where his family has lived since 1960. The small facility stands amid the sugarcane fields. Growing his own sugarcane, harvesting by hand and fermenting with natural yeasts directly connect the work in the fields with the production of the spirit.
