Special features: The CLAIRIN Vaval - 55.1 is produced at the Arawaks distillery in southern Haiti by Fritz Vaval. The sugarcane harvest is done manually without the use of chemicals, and the sugarcane juice is pressed immediately after harvesting. Fermentation occurs spontaneously with wild yeasts, resulting in an authentic and unadulterated taste. Distillation is done in a specially constructed copper column, powered by a steam boiler that comes from the steam engine of an old locomotive.

Distillery/Bottler: The Arawaks distillery, run by Fritz Vaval, is located in the coastal town of Cavaillon in southeastern Haiti. The distillery has been family-owned since 1947 and cultivates the sugarcane variety "Madame Meuze" on 20 hectares of land naturally without the use of chemical fertilizers or pesticides.
