Volume: 0.7 litres | Alcohol content: 66.4% | Chill filtration: No | Colouring: No
Special Features:
This bottling is the first release in the Rare Single Cask series. The Tasmanian single malt matured in a single former Cognac cask made from French Limousin oak. The cask influence emerges in the combination of ripe stone fruit, warm vanilla, delicate spice and cedarwood.
The whisky was bottled at a cask strength of 66.4%, with a total outturn of 996 bottles. It has no added colouring and is non-chill-filtered, and it comes in a premium box.
Tasting Notes:
- Nose: The nose reveals ripe stone fruit and dried apricots with warm vanilla and a subtle touch of nutmeg.
- Palate: The whisky feels smooth on the palate, combining juicy peach with creamy vanilla and delicate spices.
- Finish: The finish is long, fading with spicy cedarwood and a hint of vanilla.
Distillery/Bottler:
Callington Mill Distillery operates in Oatlands in Tasmania’s interior, where the restored Callington Mill and its historic grounds shape the setting. John Vincent had the windmill built in 1837; alongside the official milling business, he also ran an illicit distillery at the time. The present-day distillery grew from founder John Ibrahim’s vision. After meeting Bill Lark and travelling through Scotland with him, Ibrahim developed a modern distillery for this location.
The distillery makes its single malts with water from the nearby Blackman River, malted barley and yeast. According to Callington Mill, fermentation lasts seven days. Maturation takes place in selected oak casks, and the distillery also works with its own cooperage. In this single-cask bottling, locally grown barley meets a former Cognac cask made from Limousin oak.
