Special Features:

A finish in a cask previously used for Cognac distinguishes this single-cask release from Bimber. It forms part of Collection New Vibrations for La Maison du Whisky. Distilled in 2018 and bottled in 2023, the single malt comes from cask 327/25, with a release of 314 bottles.

The whisky was bottled at its cask strength of 58.9% without chill filtration. Its colour has not been altered by added colouring. The bottle contains 0.7 litres and comes in a presentation tube.

Tasting Notes:

• Nose: The nose is delicate and airy, with powdery rice notes, fresh ginger, ivy and honeysuckle. With aeration, more concentrated impressions of arnica, dark chocolate, candied mirabelle plum and barley porridge emerge, accompanied by a refreshing saltiness.
• Palate: The powerful, dense opening recalls Breton butter pound cake. The texture then becomes fine-grained. Towards the end of the palate, infusion-like notes and a pleasant malty bitterness combine with green impressions of bay leaf, lemon balm and sorrel.
• Finish: The long, full-bodied finish reveals Espelette chilli, curry and hints of vin jaune from the Jura. Root-like and herbal impressions of gentian and dandelion become increasingly prominent, alongside candied pear, candied walnut, date and plum. The flavours linger persistently.

Distillery/Bottler:

Bimber is an independent distillery in London. All its barley comes from a single farm and is malted on traditional malting floors. Hand mashing is followed by seven days of fermentation in wooden washbacks made in the distillery's own cooperage. Bimber heats its small copper stills with a direct flame and selects its maturation casks individually. Dariusz Plazewski applies strict selection criteria, examining what each cask previously held and how long it held those contents.

Bimber laid down its first casks for maturation on 26 May 2016. The First, the distillery's inaugural single malt, was released in September 2019. This Cognac release is an official Bimber bottling for La Maison du Whisky.
