Special Features:

The Oloroso finish defines this small release distilled in 2001. The whisky first matured in previously used ex-bourbon hogsheads, then received its finish in fresh Oloroso sherry butts. Edradour combined casks 2413, 2414 and 2504; the 21-year-old single malt was bottled at cask strength on 3 July 2023 at 52.1%. The release comprises 1,919 bottles.

Raisins and dates bring sherry fruit, while vanilla, apple and orange add brighter accents. Cocoa, nuts and spiced oak complete the fruit-led profile. The whisky retains its natural colour and has not been chill-filtered. It comes in a tube.

Tasting Notes:

• Nose: On the nose, fruitcake, dates and chocolate-coated raisins mingle with cocoa, walnut and spiced oak. Toffee, buttered toast with strawberry jam, and hints of tobacco, sandalwood and cinnamon follow.
• Palate: The whisky is full-bodied and slightly oily on the palate. Juicy raisins, toffee apple, vanilla fudge and Seville orange peel sit alongside raspberries, figs and dates in dark chocolate. Apple, cinnamon almonds and oak spice round out the flavour.
• Finish: The finish is long. Cinnamon and dark chocolate linger with fruity sherry notes and a little vanilla; a touch of oak lends a dry close.

Distillery/Bottler:

Edradour distilled this malt and released it as a distillery bottling. The Highland distillery was founded in 1825 as a cooperative of local farmers. It still operates in its original farm buildings, using particularly small traditional pot stills. Andrew Symington, the founder of Signatory Vintage, has owned Edradour since 2002.

Its equipment includes an open cast-iron mash tun that is more than 110 years old. The wort then passes to two Oregon pine washbacks; distillation uses two copper pot stills and water-cooled worm tubs. For this bottling, maturation in ex-bourbon hogsheads was followed by a finish in Oloroso sherry butts.
