Sherry maturation is central to TB/BSW. Thompson Bros. take their inspiration from historical blends whose character was strongly shaped by sherry casks. For this small-batch bottling, they select single malt and single grain whiskies that have each matured for more than six years before blending. TB/BSW stands for Thompson Bros / Blended Scotch Whisky.

After blending, the whisky is given time to rest. Water is then added slowly to bring its alcohol content to 46% before it is bottled at Dornoch Distillery without chill filtration or added colouring. Fruity sweetness, pastry and warm spices define its sherry character.

Tasting Notes:

• Nose: On the nose, fruity plum sauce and pale raisins meet crunchy caramel toffee. A note reminiscent of coffee pastry cream adds to these sweet impressions.
• Palate: On the palate, pale raisins mingle with raisin bread and Jamaican cake with butter. A sweetness reminiscent of maple syrup joins them.
• Finish: Gentle, warm notes of allspice, nutmeg and cinnamon linger on the finish. Orange peel and dried figs round out the aftertaste.

Distillery/Bottler:

Thompson Bros. is run by brothers Phil and Simon Thompson. Their whisky experience grew at the bar of the Dornoch Castle Hotel, where they developed the selection and its reputation over many years. With support from a crowdfunding campaign, they went on to establish their own distillery in Dornoch. Whisky production began in 2017 in a former fire station dating from the 1880s.

While their own whisky was maturing, the brothers also began releasing independent bottlings. Alongside Scottish single malts, their range includes whiskies from elsewhere and rum. TB/BSW and the blended malt SRV5 are their two core blends. For TB/BSW, the brothers select and blend the malt and grain whiskies, then bottle the whisky in Dornoch.
