For Small Batch Edition #8, Signatory Vintage brought together whisky from several Oloroso sherry casks. GlenAllachie distilled this Speyside single malt in 2012; after eleven years of maturation, it was bottled in 2024 at 48.2%. The whisky is bottled without added colouring or chill filtration.

Oloroso maturation combines fruity sweetness with spicy and malty impressions. Apple and honey-soaked raisins meet cinnamon and biscuity malt. On the palate, apple fruit with a little woody spice gives way to orange peel and vanilla cake with pieces of fruit; clementine, stewed stone fruit and a hint of clove add distinctive touches to the finish.

Tasting Notes:

• Nose: On the nose, cinnamon, juicy apple and honey-soaked raisins mingle over a biscuity malt note.
• Palate: Ripe apples with a little woody spice initially lead on the palate. Aromatic orange peel and vanilla cake with pieces of fruit follow.
• Finish: Clementine and stewed stone fruit linger on the finish with a hint of clove.

Distillery/Bottler:

The GlenAllachie Distillery lies at the foot of Ben Rinnes in Speyside. It was built in 1967 to designs by William Delmé-Evans and began production in 1968. The facility was designed to let gravity handle much of the movement of materials, reducing energy requirements. In 2017, Billy Walker, Trisha Savage and Graham Stevenson acquired the distillery from Chivas Brothers. Its earlier focus on whisky for blends was followed in 2018 by the launch of its first own core single malt range.

Signatory Vintage was founded in 1988 by Andrew Symington and his brother. Andrew developed his interest in individual single-cask whiskies while working at Prestonfield House Hotel in Edinburgh. The company's first bottling was a Glenlivet distilled in 1968. The acquisition of Edradour in 2002 gave Signatory its own distillery as a base; by 2007, the business had moved entirely to Pitlochry.
