Holyrood Embra is release number 2 from the young Edinburgh distillery and its first peated single malt bottling. The malt recipe comprises 56% heavily peated malt, 41% distilling malt and 3% chocolate malt. The whisky matured in first-fill Bourbon Barrels, Islay Quarter Casks and virgin American oak casks. The release comprises 8,188 bottles, bottled at 43.6%, without chill filtration or added colouring.

Embra combines light hints of smoke with pastries, dark chocolate and fruit. Its production involved different malt varieties as well as several yeasts, including a passion fruit wine yeast. Its name is a colloquial term for Edinburgh. The label draws on depictions of Saint Leonard, the patron saint of coopers.

Tasting Notes:

• Nose: On the nose, lemon peel and a bitter horse chestnut note combine with a hint of peppermint and light hickory smoke.
• Palate: On the palate, waffle pastries and dark chocolate mousse meet notes of earthy Highland peat smoke.
• Finish: Pear compote appears on the finish, which ends on a rounded, clean note.

Distillery/Bottler:

Holyrood Distillery was founded in Edinburgh in 2019 and is located on St Leonard's Lane in the Southside district. Edinburgh’s brewing heritage inspires its work with different malt varieties, fermentation methods and cask combinations. Rather than maintaining a fixed core range, the distillery focuses on small batches that allow for different production choices. Embra is an official distillery bottling that combines this approach with a peated recipe.
