Japanese yuzu takes centre stage in Etsu Double Yuzu. Its pre-dried peel forms part of the recipe alongside juniper berries, coriander seeds, liquorice, angelica root and matcha. The botanicals macerate for seven days and are then removed before the infused alcohol is distilled. Water from the Ōu Mountains brings the gin to its drinking strength of 43%. This version contains 0.7 litres and comes without gift packaging.

Alongside the citrus freshness, the botanicals contribute a range of accents: coriander adds a little sweetness and a minty nuance, while juniper brings a peppery note. Liquorice adds anise-like and woody tones with some bitterness. Angelica root contributes bitterness and warmth, while matcha adds subtle herbal notes and lightly bitter and sweet impressions.

Distillery/Bottler:

Akita Distillery lies in the north of Japan's Honshū island, near the Ōu Mountains. Alongside Double Yuzu, it also produces Etsu Double Orange and Etsu Sakura. The distillery uses ingredients such as yuzu, bitter orange peel, matcha and cherry blossoms to give the individual recipes their distinct emphasis.

For maceration, Akita uses alcohol made from sugarcane molasses at 67%. Once the botanicals have been removed, the alcohol is diluted to 30% before a single distillation in a copper pot still. The distillate leaves the still at 65% and is brought to 43% with water from the Ōu Mountains. Before bottling, the gin passes through a fine-mesh filter; it is not chill-filtered.
