Etsu Pacific Ocean Water combines Japanese citrus aromas with a maritime profile. Its distinctive feature is the water: alongside water from the Taisetsu mountains, a small proportion drawn from the depths of the Pacific Ocean is used. This is added after distillation when the gin is diluted to bottling strength, giving it its characteristic combination of iodine notes, gentle salinity and mineral freshness.

The recipe includes yuzu, bitter orange, juniper, coriander, angelica and liquorice. After 22 hours of maceration, the botanicals remain in the spirit during distillation. The gin is bottled at 45% in a 0.7-litre bottle and offered without gift packaging.

At the Global Gin Masters, this gin received a Master award in 2022 and Gold in both 2023 and 2025. Its citrus and maritime character also lends itself to a gin and tonic or use in cocktails.

Tasting Notes:

• Nose: The nose reveals fresh yuzu and bitter orange, accompanied by iodine notes and an impression of sea breeze.
• Palate: The gin is smooth and balanced on the palate. Gentle salinity combines with citrus flavours and mild spice.
• Finish: The lingering finish feels silky, with mineral freshness and yuzu peel remaining present.

Distillery/Bottler:

Asahikawa Distillery is located in the city of the same name on Hokkaido, Japan's northern main island. Etsu The Original and Etsu Pacific Ocean Water are produced here. Water from the Taisetsu mountains is a shared ingredient in their production; the additional deep Pacific Ocean water distinguishes Pacific Ocean Water from the original bottling. The name Etsu means joy or pleasure in Japanese.

For these two gins, the distillery macerates the botanicals in sugarcane alcohol at 67%. This is followed by a single distillation in a copper still, from which the distillate emerges at 83%. After dilution, a fine-mesh filter removes remaining impurities. The gins are not chill-filtered.
