Flóki Oloroso Sherry Cask Finish matures in American oak before finishing in First Fill Oloroso Sherry Casks. For the initial three years of maturation, Eimverk uses casks that previously held Flóki Young Malt; the whisky is stored at the foot of the Hekla volcano. First released in 2019, this edition is offered as a single-cask bottling.

The whisky is made exclusively from Icelandic barley. Its fruity character combines pronounced herbal spice and resinous notes without being smoky. The 2023 bottling contains no added colouring and is non-chill-filtered. It has an alcohol content of 47% and comes in a 0.7-litre bottle with deep-red gift packaging.

Tasting Notes:

• Nose: The nose reveals ripe cherries, dark berries and dried fruit, complemented by berry compote. Resinous notes and fir needles appear alongside spicy herbs and a delicate tobacco note.
• Palate: The whisky is powerful and full-bodied on the palate. Cherries and sweet candied figs combine with roasted nuts and caramelised almonds. Resin, thyme and camomile define its herbal side, while mint remains a subtle nuance. Slightly sticky tobacco notes and woody accents round out the flavour.
• Finish: Red fruit and berry notes linger alongside toasted oak in the medium-length finish. The herbal spice persists while a gentle resinous note lingers.

Distillery/Bottler:

Eimverk Distillery in Garðabær was founded in 2009 as a family business. Local ingredients are central to its work: all the barley used for Flóki is grown in Iceland. The hardy barley variety selected for it is adapted to the short, intense Icelandic summer.

Flóki's development involved four years of work, including 163 trial distillations and maturation tests. Eimverk designs and builds its own pot stills to bring out the barley's aromas during distillation. Alongside its single malt, the distillery makes the pot-distilled gin Vor and Víti, its interpretation of Icelandic Brennivín.
