Etsu Pacific Ocean Water combines Japanese citrus botanicals with a maritime profile. Water from the Taisetsu Mountains and a proportion of seawater are used to bring the gin to bottling strength. Its combination of citrus freshness, salt and iodine notes sets this bottling apart within the Etsu range.

The recipe includes yuzu peel, bitter orange peel, juniper, coriander seeds, liquorice root and angelica root. The botanicals macerate for 22 hours before being distilled together with the alcohol. The gin is bottled at 45% alcohol in a 0.7-litre bottle and comes in gift packaging.

Tasting Notes:

• Nose: On the nose, fresh yuzu and bitter orange combine with iodine notes and an impression of sea breeze.
• Palate: The gin is smooth and balanced on the palate. Gentle salinity accompanies citrus notes and mild spices.
• Finish: The finish is silky and lingering. Mineral freshness and yuzu zest remain in the aftertaste.

Distillery/Bottler:

Asahikawa Distillery is located in the city of the same name on Hokkaido, Japan’s northern main island. Etsu The Original and Etsu Pacific Ocean Water are produced here. Water from the Taisetsu Mountains is used to make both gins; for Pacific Ocean Water, seawater supplements this base.

The distillery macerates the botanicals in spirit made from sugarcane molasses at 67% alcohol. Maceration is followed by a single distillation in a copper pot still, producing a distillate at 83% alcohol. The spirit is then brought to bottling strength. A fine-mesh filter removes impurities before bottling; the gin is not chill-filtered.
