Beefeater London Dry combines a bold juniper character with distinct citrus notes. This bottling uses nine botanicals: juniper, lemon peel, Seville orange peel, coriander seeds, almonds, orris root, liquorice root, angelica root and angelica seeds. The two angelica components count as separate ingredients.

Before distillation, the botanicals steep in neutral grain alcohol for 24 hours. During this maceration, their flavours and oils pass into the alcohol. The mixture is then distilled in a pot still, gently heated by steam, in a process lasting more than seven hours.

This bottling contains 0.7 litres at 40% alcohol. Its juniper and citrus profile suits a classic gin and tonic or a Martini. A slice each of lemon and orange makes a suitable garnish for the gin and tonic.

• Nose: On the nose, juniper and citrus notes combine with a clean, earthy impression.
• Palate: The gin is soft and clean on the palate, with orange and coriander spice.
• Finish: Orange and coriander linger in the sweetish finish.

Distillery/Bottler:

Beefeater's history goes back to the Chelsea distillery, founded in 1820. Trained pharmacist James Burrough took over the business in 1863 and developed gin and liqueur recipes there. Beefeater first appears in company records in 1876. The name refers to the Yeoman Warders, the guards of the Tower of London.

After an intervening period in Lambeth, production moved to Montford Place in Kennington in 1958. Beefeater continues to be distilled there in London. The brand has belonged to Pernod Ricard since 2005; production of the London Dry still follows Burrough's recipe, with nine botanicals and a 24-hour maceration.
