Edinburgh Classic Gin combines the characteristic juniper character of a London Dry with pine buds, lavender and fruity botanicals. Its recipe comprises 14 ingredients, processed with neutral grain spirit. Distinctive botanicals include orange peel, lemongrass, black mulberries and hazelnuts. The mulberries contribute a jam-like fruit note, while the natural oils in the hazelnuts support the soft mouthfeel. Pine buds add a subtle woody nuance.

Introduced in 2010, Classic is the core of the Edinburgh Gin range and also serves as the base for its fruit gin liqueurs and flavoured gins. This bottling contains 0.7 litres at 43% alcohol. For a gin and tonic, serve with plenty of ice and an orange zest garnish.

Tasting Notes:

• Nose: On the nose, the gin is fresh and clean, with a subtle spiciness.
• Palate: On the palate, rounded juniper and pine mingle with floral lavender. Gentle spice nuances and aromatic citrus notes complement the profile.
• Finish: Orange and lime emerge on the finish. The lively citrus notes give way to a soft, rounded close.

Distillery/Bottler:

Edinburgh Gin is based in Scotland’s capital. The distillery is now located in The Arches on East Market Street, close to Waverley station and the Royal Mile. There, the team works with the stills Annie, Lina and Matilda: two have a capacity of 2000 litres each, while the smaller one holds 250 litres.

During production, the team steeps some of the botanicals in neutral spirit overnight. Lighter and floral ingredients are placed in baskets through which alcohol vapour passes during distillation. Electrically heated water baths gently heat the stills, after which the heads, hearts and tails are separated. As plant ingredients vary with the seasons, the team regularly adjusts the recipes. Different botanicals are used depending on the gin.
