Coastal plants give Edinburgh Seaside its maritime character. This London Dry Gin uses juniper alongside botanicals such as bladderwrack, scurvygrass and ground ivy. Originally gathered on beaches around Edinburgh, these plants connect the recipe to Scotland’s east coast.

The ingredients play different roles: bladderwrack contributes sweet impressions and a scent of sea air, while scurvygrass adds light spice and saltiness. Ground ivy brings fresh grassy notes to the finish. These are joined by the pine-like character of Italian juniper and mineral accents.

The miniature contains 0.05 litres at 43% alcohol. Serve the gin with tonic and a garnish of thyme and grapefruit peel. A Martini also brings out its maritime character.

Tasting Notes:

• Nose: The nose offers a fresh sweetness accompanied by a scent of sea air.
• Palate: On the palate, gentle saltiness and delicate sweetness combine with herbal and grassy notes.
• Finish: The finish is clean and fresh, with lingering summery grassy notes from the ground ivy.

Distillery/Bottler:

Edinburgh Gin has been making gin in Scotland’s capital since 2010 and works in small batches. The distillery team also involves academic partners when developing new recipes: Seaside was created with the International Centre for Brewing and Distilling at Heriot-Watt University and launched in 2015. David Wilkinson, the Head Distiller at the time, had himself completed the university’s brewing and distilling degree programme. The project brought together the distillery team’s experience and the training of a new generation of distillers.
