Deep Pacific Ocean water gives Etsu Pacific Ocean Water its distinctive maritime character. To bring the spirit to 45% alcohol, the distillate is diluted with water from the Taisetsu mountains, supplemented by a small proportion of water from the depths of the Pacific. Japanese citrus aromas contrast with a saline, mineral character.

The recipe includes yuzu, bitter orange, juniper, coriander, liquorice root and angelica root. Pre-dried Japanese yuzu peel and green bitter orange peel provide the citrus component. The gin is offered at 45% in a bottle containing 0.7 litres and is also suitable for gin and tonic and cocktails.

Tasting Notes:

• Nose: On the nose, fresh yuzu and bitter orange mingle with iodine notes and a scent reminiscent of a sea breeze.
• Palate: The gin is smooth and balanced on the palate. Citrus flavours and gentle spice accompany a delicate salinity.
• Finish: The lingering, silky finish leaves mineral freshness and notes of yuzu peel.

Distillery/Bottler:

Asahikawa Distillery is located in the city of the same name on Hokkaido, Japan’s northern main island. Etsu The Original and Etsu Pacific Ocean Water are produced here. Water from the Taisetsu mountains is used to make both gins; the additional deep Pacific Ocean water distinguishes Etsu Pacific Ocean Water. The name Etsu means joy or pleasure in Japanese.

The botanicals are steeped for 22 hours in sugarcane alcohol at 67%, then distilled once together with the alcohol in a copper still. The distillate reaches 83% before being brought to drinking strength. Before bottling, a fine-mesh filter removes impurities; the gin is not chill-filtered.
