Special Features:

For Organic Mediterranean Gin, the Thompson Bros combine their botanical base with separate distillates of fresh, seasonal organic citrus fruits and herbs. Bergamot, lemon and orange come together with rosemary, thyme and bay leaf. The individual components are blended to taste, before the gin is slowly diluted to bottling strength over at least two weeks.

The gin is bottled at 45.7%, without chill filtration or added colouring. It may therefore turn cloudy when chilled or diluted. Karen Mabon designed the label.

Tasting Notes:

• Nose: On the nose, clear citrus notes mingle with subtle salinity and resinous juniper oil. Hints of clay pots, thyme and a touch of beeswax add further detail.
• Palate: Fresh herbs lead on the palate, with pronounced rosemary. A subtle chalky minerality accompanies lemon peel, olives, brine and Sancho.
• Finish: Aromatic pepper, brine and juniper remain on the finish alongside lingering citrus oils.

Distillery/Bottler:

Brothers Simon and Phil Thompson are behind Dornoch Distillery. They first gained experience while developing the whisky bar at Dornoch Castle Hotel. Their involvement with whisky inspired a desire to distil their own. Following a successful crowdfunding campaign, whisky production began in 2017.

The distillery occupies a former fire station dating from the 1880s in Dornoch. Alongside Highland Single Malt, it produces organic gin. Under the Thompson Bros name, the brothers also work as independent bottlers of whisky and rum.
