Special Features:

Míl brings together Irish pot still distillation and a Mediterranean-inspired selection of nine botanicals. Produced in small batches, the gin uses juniper, almonds, basil, bergamot, gooseberries, olives, orris root, rosemary and thyme. It is bottled at 42% alcohol in a 0.7-litre bottle.

The connection to the Iberian Peninsula began with a stained-glass window in the former St. James’ Church, home to Pearse Lyons Distillery. Depicting the pilgrimage route to Santiago de Compostela, it inspired the Mediterranean concept. The name Míl recalls a mythical Spanish warrior whose descendants, according to legend, settled in Ireland.

Tasting Notes:

• Nose: Fresh citrus notes meet subtle hints of basil, thyme and rosemary on the nose. Juniper adds a pine-like aroma.
• Palate: The gin is fresh and bittersweet on the palate.
• Finish: Distinct citrus notes linger on the finish.

Distillery/Bottler:

Pearse Lyons Distillery is located in Dublin’s The Liberties district, inside the former St. James’ Church. Pearse and Deirdre Lyons began restoring the building in 2013, a project that took more than four years; the distillery opened its doors in 2017. The location also has a family connection: Pearse Lyons’ grandfather came from neighbouring Echlin Street.

Pearse Lyons brought a scientific background in brewing and distilling. After studying biochemistry in Dublin, he completed a master’s degree in brewing and distilling in Birmingham in 1968. On his mother’s side, he came from a family spanning five generations of coopers, whose Dublin business made casks for Irish breweries and distilleries. Alongside its whiskeys, the distillery also produces Míl Gin.
