Special Features:

No.3 Organic combines a classic juniper-led recipe with organic certification. Six botanicals define its character: juniper berries, coriander seeds, angelica root, cardamom, grapefruit peel and orange peel. The citrus peels bring fruity freshness to the juniper, while the seeds, root and cardamom contribute its dry, spicy side. At 46% alcohol, the gin lends itself to both a classic gin and tonic and a dry Martini.

The base is neutral spirit made from organically grown French winter wheat. The dried botanicals, already in small pieces, are precisely weighed and steeped in it for 16 hours. As they absorb liquid and soften, their aromatic compounds become available for transfer into the spirit during the subsequent distillation. All six ingredients are distilled together, allowing their essential oils to interact during this stage.

Distillation takes up to seven hours. The master distiller separates the heads and selects the heart of the distillate, which contains around 76.5% alcohol at this point. After a resting period and further filtration, water is added to bring the gin to 46%. Flavour, density and alcohol content are checked during production. The organic certification bears the control body code NL-BIO-01.

Tasting Notes:

  • Nose: The nose is fresh and clear, with pine-like juniper, mint and lemon oil. Thyme and orange then emerge.
  • Palate: On the palate, the gin is dry and fresh, with juniper and gentle spice notes. Citrus fruit and spice are balanced, with individual accents of grapefruit, angelica root, cardamom and chilli.
  • Finish: The long finish remains dry and earthy, with spicy and peppery notes.

Distillery/Bottler:

Behind No.3 is Berry Bros. & Rudd, a family-owned London wine and spirits merchant founded in 1698. The brand name refers to its historic premises at No. 3 St James’s Street. To develop the recipe, the company spent two years working with gin researcher Dr. David Clutton and bar professionals such as Alessandro Palazzi of the DUKES Bar. The aim was a classic London Dry whose juniper, citrus and spice profile would hold its own in both a gin and tonic and a Martini.

No.3 is distilled at De Kuyper Royal Distillers in the Netherlands. Founded by Johannes de Kuyper in 1695, the family business uses a copper still dating from 1911 exclusively for No.3. Originally built for genever, it has a still head designed to capture juniper aromas. A masonry enclosure insulates the pot; in 1981, a steam-heated copper coil replaced the former coal firing. Despite the addition of temperature monitoring, the still remains manually controlled. The vapours condense in a copper coil inside a wooden cooling vat.
