Production of this London Dry Gin begins in the estate's own wheat fields. Ramsbury makes its own base spirit, then redistils it with botanicals. Fresh quinces grown on the distillery grounds play a distinctive role, adding fruity and floral impressions to the classic juniper character.

The botanicals also include coriander, angelica root, orris root, liquorice, cinnamon, and lemon and orange peel. The aromatic interplay brings citrus freshness and warm spice together with woody angelica and bitter almond. The gin is produced in small batches and bottled at 40% alcohol in 0.7-litre bottles. It works well in a classic gin and tonic.

Tasting Notes:

• Nose: Juniper leads the nose, accompanied by quince, liquorice and coriander. Freshly cut grass and lemony notes add further detail.
• Palate: Juniper and citrus combine with warming spice on the palate. Quince, distinct floral notes and pronounced sweetness round out the flavour.
• Finish: The medium-length finish is soft and silky, with lingering citrus notes.

Distillery/Bottler:

Ramsbury Distillery is located on the Ramsbury Estate in Wiltshire, England. Wheat growing, harvesting, milling, distillation and bottling all take place on the estate. The grain can be traced back to the individual field. Ramsbury uses a copper column with 43 plates to produce its base spirit, with separate pot stills available for gin production.

Farming and distilling are connected through several resource cycles. A biomass boiler burns wood from the estate's own forests to provide heat for distillation. Spent grain feeds cattle, whose manure returns to the fields. Wastewater is treated through reed beds before being returned to the land.
