Volume: 0.7 litres | Alcohol content: 57.1% | Chill filtration: No | Colouring: No
Special Features:
Maturation in refill hogsheads brings together 19 years of ageing, pronounced peat and maritime impressions in this Highland single malt. The previously used casks give the smoky spirit room to express itself, while honey and fruit provide a counterpoint to its salty, savoury notes.
The whisky was distilled on 21 June 2007 and bottled by Thompson Bros. in Dornoch in July 2026. It has an alcohol content of 57.1% and is bottled without chill filtration or added colouring in a 0.7-litre bottle. It may become cloudy when cold or after water is added. WHISKYHOBO designed the label.
Tasting Notes:
- Nose: On the nose, charred hazelnuts mingle with dusty, peaty malt and crushed grain. Burnt sage, rosemary and heather smoke accompany maritime impressions of oily fishing ropes, tar, fish traps and crushed seashells. Quince and apple peel add delicate fruity accents.
- Palate: The whisky is very powerful on the palate, where pronounced citrus notes meet heather honey and cooked apples. Salt and wet slate lend a mineral character. Smoked ham, anchovies and capers in brine add savoury notes to the malty flavour.
- Finish: Salted peanut brittle emerges on the finish. The peat remains powerful and earthy, while cigar smoke lingers.
Distillery/Bottler:
Thompson Bros. is run by brothers Phil and Simon Thompson from Dornoch in Sutherland. Their work with whisky began around the whisky bar at Dornoch Castle Hotel. With the support of 200 crowdfunding participants, they established their own distillery there; in 2017, they filled casks with their first self-distilled whisky spirit. Alongside this, they developed their independent whisky and rum bottlings, which became an important source of income while their own whisky matured.
The team handles maturation, dilution, filtration and bottling itself in Dornoch. This allows it to give individual treatment to both its own spirits and independently selected whiskies. For its own whisky production, Dornoch uses heritage barley varieties and yeasts from local breweries, among other ingredients. This Highland malt is part of Thompson Bros.' independent bottling programme.
