Special Features:

Spontaneous fermentation and six different casks define this spiced rum from Gengenbach. The distillery uses sugar cane molasses from Paraguay without adding pure yeast cultures during fermentation. After fermentation, the fermented molasses remains in open vessels for several more weeks. Wild yeasts and bacteria become active on the surface, contributing to its spicy aromas.

Double distillation in copper pot stills follows. The rum then matures for six years in six different casks, each contributing its own aromatic influences. It is offered at 42% alcohol in a 0.5-litre bottle without gift packaging.

Tasting Notes:

• Nose: On the nose, toffee and dried fruit, including raisins, meet delicate pastries. A light bitter orange note complements the aromas.
• Palate: The rum feels very soft on the palate and shows balanced sweetness. Ripe banana, candied orange and cinnamon create a layered flavour profile.
• Finish: Vanilla and caramel linger through the very long finish.

Distillery/Bottler:

WILD Schwarzwaldbrennerei & Weingut GmbH is based in Gengenbach in the Black Forest. Fruit growing and distilling have been passed down through the Wild family since 1855. Franz Wild Senior turned what had been a sideline for generations into his profession and worked as the distiller in charge at Edelbrennerei von Selteneck. As early as the 1960s, he was exploring unusual fruit varieties for his spirits.

Today, brothers Max, Manuel and Lukas continue to run the family business. Max has a degree in beverage technology and learnt to distil from his grandfather, Franz Wild Senior. Experience with modern methods from various countries complements his inherited distilling knowledge.
