Maturation in first-fill bourbon casks shapes this five-year-old blended Irish whiskey from West Cork. Its composition brings together 75% grain whiskey and 25% malt whiskey. Malty sweetness and bright fruit notes meet subtle spice.

The whiskey is triple-distilled and bottled at 40% without chill filtration. Distillation, cask maturation and bottling all take place on site at West Cork Distillers in Ireland.

Tasting Notes:

• Nose: On the nose, malt and lingering sweetness combine with citrus fruit, apple and nutmeg.
• Palate: The whiskey is smooth and balanced on the palate. Malt and lingering sweetness combine with a light citrus note, apple, nutmeg and crushed pepper.
• Finish: A gentle vanilla note lingers on the finish.

Distillery/Bottler:

West Cork Distillers was founded in 2003 by childhood friends John O’Connell, Denis McCarthy and Ger McCarthy. It began in Union Hall, with two small stills in a room behind Denis McCarthy’s house. As the company grew, the decision to relocate was made in 2014. Much of the equipment needed was built in-house, including the still known as Rocket.

At its Marsh Road site in Skibbereen, the distillery operates both pot stills and column stills. The cask warehouses and bottling lines are also on the premises, bringing West Cork’s key production stages together at a single location.
