Special Features:

The 2025 Edition is the Ardara Distillery’s first single malt release. Heavily peated barley malt at 55 ppm forms its basis; during triple distillation using the All-Grain-in method, the entire grain is carried through to the wash still. Before cask maturation, the spirit is transferred to solera vats. The whiskey then matures with a sherry-led emphasis in American bourbon and virgin oak casks. A total of 8,000 bottles of this 46% version were released.

The smoky character originates in the heavily peated malt and is further shaped by carrying the grain components into the first still. The solera vats used before maturation provide continuity between editions. On the sensory side, the whiskey combines peat smoke with sweet, fruity and nutty impressions. It is bottled without added colouring and is non-chill-filtered.

Tasting Notes:

• Nose: Sweet cereal notes and biscuit mingle with poached fig, coconut and raisin. A delicate hint of pipe tobacco and cold ash announces the smoke.
• Palate: Warm yeasted pastries and poached pear give way to toasted coconut, almond, leather and tobacco before powerful campfire smoke emerges.
• Finish: Soft smoke and baked apple linger with sweet spice and the warm memory of a dying peat fire.

Distillery/Bottler:

The Ardara Distillery in the coastal town of Ardara, Donegal, is the home of Sliabh Liag Distillers and produced the 2025 Edition. James and Moira Doherty returned to their family roots to establish a distillery there and revive north-west Ireland’s nearly vanished tradition of richly peated whiskeys.

Production centres on three copper stills made by Forsyths. Selected yeast strains and downward-sloping lyne arms are designed to bring out fruity and nutty notes in the spirit, together with the smoky character derived from the grain. Ardara is the only distillery on the island of Ireland dedicated to peated whiskey made using the All-Grain-in method.
