Special features: This rum is the first of its kind to be produced entirely in Ireland. Fermentation takes place from a blend of 50% sugar cane molasses and 50% sugar, followed by triple distillation in small copper pot stills. Aging uses the solera method and begins in six 50-liter bourbon casks, followed by a Pedro Ximénez sherry cask, and finally a Cabernet Sauvignon cask.
