After maturing in bourbon barrels, Akashi Ume is finished for several months in Shiratama Umeshu casks, giving it a distinctive cask character. Fruity plum and vanilla meet spice and wood.
The whisky contains 30% malted barley and is double-distilled in pot stills. The bottling has a volume of 0.5 litres and an alcohol content of 40% and comes in gift packaging. It has no added colouring, is not smoky and is chill-filtered.

Eigashima Shuzo was founded in Akashi in 1888. The company received a licence to produce whisky in 1919, and a new whisky distillery was built next to its headquarters in 1984.
Eigashima uses groundwater from its own wells for its whisky and matures the distillates in oak casks at its site near the Seto Inland Sea. For Akashi, the company combines this foundation with the sake-inspired Shubo method, which is intended to accelerate the start of fermentation and promote the development of complex aromas.
