Special Features:

The twelve-year-old Okami Pure Malt initially matures in American white oak casks before receiving a twelve-month finish in casks made from Mizunara, the Japanese water oak. San Foods uses spring water from Mount Fuji in its production. This Japanese blended malt is chill-filtered and bottled without added colouring at 40% alcohol in 0.7-litre bottles.

Ripe peach, roasted pecan and citrus peel shape the opening. Ginger, chocolate, leather and oak give the whisky spice and depth before green pear, melon and peppery oak lead into a long, balanced and dry finish.

Tasting Notes:

• Nose: The nose opens with ripe peach, nectarine and delicate citrus notes. Vanilla, sweet malt and toasted oak follow, while honeysuckle and jasmine provide subtle floral nuances. Roasted pecans, fine chocolate and candied ginger add further layers to the bouquet.
• Palate: The whisky feels velvety, smooth and layered on the palate. Peach, ripe pear, roasted pecans and bittersweet chocolate combine with ginger, leather and restrained oak. A few drops of water bring out lemon peel and make the gentle tannins more apparent.
• Finish: The long, balanced finish brings together green pear, melon and a hint of salty malt. Dry oak and peppery spice remain clearly perceptible.

Distillery/Bottler:

San Foods, based in Yamanashi Prefecture, is the company behind this Okami bottling. Founded in 1976, the company produces whisky alongside other spirits and obtained its whisky production licence in 2014. At its facility in Nirasaki, its spirits operations encompass the production of new make spirit, distillation, blending and bottling.
