Togouchi Ayumi is a limited travel-retail edition composed of malt and grain whisky. Both components are produced entirely in Hiroshima Prefecture from barley, of which 15% is malted.

The whisky first matures in bourbon casks in a former railway tunnel beneath Mount Osorakan, where the temperature is approximately 14°C and the humidity around 80%. It is then finished for several months in sake casks.

Its profile combines green apple, white grapes, light-coloured fruits and caramel with vanilla and malt. Woody accents, gentle spices and roasted nuts complete its character.

Tasting Notes:

• Nose: The nose is delicate, combining vanilla, green apple and malt.
• Palate: The whisky is complex on the palate, with a tangy lactic note, wood and white fruits.
• Finish: The long finish combines white fruits, spices and malt.

Distillery/Bottler:

Sakurao Brewery and Distillery produces and bottles Togouchi Ayumi in Hiroshima Prefecture. The company’s history began in Hatsukaichi in 1918, and it opened Sakurao Distillery in 2018 to mark its centenary. In March 2021, it changed its name from Chugoku Jozo Co., Ltd. to Sakurao Brewery and Distillery Co., Ltd. With Togouchi, the team brings its long-standing experience in sake and shochu to whisky production and distinctive cask finishes.
