Togouchi Peated Cask Finish is a Japanese blend that first matures in bourbon casks before finishing in casks previously used for Islay whisky. This second maturation phase adds subtle smoke and peat notes to its sweet, fruity foundation. The whisky is offered at 40%, without chill filtration or added colouring.

Black tea, orange peel and chocolate shape the aroma; on the palate, honey and coconut mingle with light smoke. Caramelised sugar, smoked peat and lavender lend distinctive touches to the balanced finish.

Today's Togouchi range is entirely distilled, matured and blended by Sakurao in Japan. This blend uses malt and grain whiskies from the Sakurao Distillery. Finishing in casks previously used for smoky whisky combines this Japanese foundation with an additional smoky influence from maturation.

Tasting Notes:

• Nose: The nose is fruity, combining black tea with orange peel and chocolate. Ester-like aromas add another dimension.
• Palate: The whisky feels soft and sweet on the palate, with light smoke, honey and coconut. Ginger and Earl Grey tea round out the flavours.
• Finish: Caramelised sugar, smoked peat and lavender linger in balance. A charcoal-like flavour highlights the sweetness and acidity of orange, along with dark chocolate.

Distillery/Bottler:

Togouchi is produced by SAKURAO Brewery and Distillery Co., Ltd., based in Hatsukaichi in Hiroshima Prefecture. Founded in 1918, the company was known as Chugoku Jozo for many years. Its experience with traditional drinks such as sake and shochu provides the foundation for its whisky production today. The Sakurao Distillery was completed in December 2017; an expansion followed in 2019, adding grain whisky production equipment and a new whisky warehouse.

For its Togouchi blends, Sakurao selects malt and grain whiskies distilled and stored at its own facilities, blends them and bottles the resulting whisky. The blenders bring the different spirits into balance; within the CASK FINISH series, selected casks add further maturation accents to the whiskies. For Peated Cask Finish, the company therefore produces the base whiskies, creates the blend and carries out the finishing maturation for this official bottling.
