For Yamazaki 25, Suntory brings together malt whiskies matured for at least 25 years in American, Spanish and Japanese Mizunara oak casks. In the reformulation introduced in 2021, chief blender Shinji Fukuyo gave Mizunara oak a more prominent role while balancing it with the other two oak varieties.

Incense and sandalwood give the whisky its Mizunara-led character. Ripe persimmon and ume plum bring fruit and delicate sweetness, while ginger adds spice. Wood sweetness and a smoky note linger through the long finish. This single malt is offered at 43% in a premium box.

Tasting Notes:

• Nose: The nose opens with smoky incense notes from Mizunara oak, followed by ripe persimmon and ume plum.
• Palate: The palate begins with smoky Mizunara sandalwood. Delicate persimmon sweetness, tart ume plum and gentle ginger spice then unfold.
• Finish: The long finish retains the smoky Mizunara note and a delicate sweetness from the wood.

Distillery/Bottler:

Suntory founder Shinjiro Torii established Yamazaki Distillery near Kyoto in 1923 as Japan’s first malt whisky distillery. He chose the site partly for its soft water and humid climate where three rivers meet. The distillery produces different styles of malt whisky, which Suntory brings together for its bottlings. Suntory is responsible for composing and bottling Yamazaki 25.
