Special Features:

L'Organic 10 combines organic origins with maturation in Limousin oak. The blend comprises ten- and twelve-year-old eaux-de-vie, and the cask selection includes new oak casks. This Cognac comes from Grande Champagne and belongs to Jean-Luc Pasquet's organic XO range.

Production begins with a dry, high-acidity white wine, which is distilled twice on its lees in a Charentais still. The Cognac is bottled at the estate at 40%, without chill filtration or the addition of sugar or caramel colouring. The bottle contains 0.7 litres and comes in gift packaging.

Tasting Notes:

• Nose: Jasmine and orange blossom give the nose its floral character. Sweet fruit notes, cloves and roasted coffee add further nuances.
• Palate: The palate opens smoothly, before the wood structure develops. Pomelo and pear complete the flavour profile.
• Finish: The spice of freshly ground black pepper remains present throughout the long finish.

Distillery/Bottler:

The Pasquet family's estate in Grande Champagne has been family-owned since 1730. Jean-Luc and Marie-Françoise Pasquet began converting the estate to organic viticulture in 1995, gaining Agriculture Biologique certification in 1998. Their son Jean now runs the house, having learnt the craft alongside his father since childhood.

Fermentation with naturally occurring yeasts is part of the house's approach. Pasquet uses grapes from its own estate and distils the wines on their lees. Production thus remains closely tied to the estate, from vineyard to spirit.
