This 11-year-old single malt is part of the inaugural Kilchoman Family Collection and was matured entirely in ex-Oloroso sherry butts. Malt peated to 50 ppm at Port Ellen gives it its powerful smoky profile. It was bottled at 54.7% without chill filtration or added colouring, in a 0.7-litre bottle.

The 11-year-old is the youngest of the four releases and the only whisky in the inaugural collection matured exclusively in ex-Oloroso sherry butts. The sherry-cask maturation combines Kilchoman’s maritime peat smoke with raisin sweetness, dark chocolate, nuts, dark fruit and spicy oak.

Tasting Notes:

• Nose: Barbecue smoke, raisin syrup and walnut cake open the nose, followed by dark chocolate, orange peel and cool sea air.
• Palate: Dense peat smoke envelops sticky dates and dark sugar syrup before roasted coffee, salted nuts, dark chocolate, clove, black pepper and charred oak emerge.
• Finish: The long, smoky and spicy finish combines lingering dark fruit and sherry sweetness with charred oak, black pepper and earthy peat.

Distillery/Bottler:

Anthony and Kathy Wills founded Kilchoman on Islay in 2005. Today, they run the distillery as a family business together with their three sons, James, George and Peter. Kilchoman’s single malts are distilled, matured and bottled at the distillery.

The casks for the Family Collection are selected during the annual review of the maturing stocks, with all five members of the founding family involved in choosing the individual releases. For this 11-year-old, Kilchoman used heavily peated malt from Port Ellen Maltings. This distinguishes it from the 100% Islay releases, for which Kilchoman grows its own barley and malts it on site.
