In 2021, Dingle expanded its range with this single malt, its first permanently available whiskey bottling. The triple-distilled whiskey is produced entirely at its own distillery. Maturation takes place exclusively in first-fill casks: 61% comes from Pedro Ximénez sherry casks and 39% from bourbon casks. The sherry casks contribute sweetness and body to the whiskey.

This bottling combines fresh fruit and mint notes with caramelised apple, raisins and vanilla. It is bottled at 46.3% without chill filtration or added colouring. The bottle contains 0.7 litres and comes in a gift tube.

Tasting Notes:

• Nose: On the nose, lime zest and freshly cut mint mingle with the aroma of sweet pears.
• Palate: The palate reveals caramelised apple, raisins and vanilla.
• Finish: Honeyed sweetness and a blend of spices linger on the tongue in the finish.

Distillery/Bottler:

Dingle Distillery lies on Ireland's Atlantic coast. Oliver Hughes, Liam LaHart and Peter Mosley founded the independent distillery in 2012 after working in the Irish craft beer scene. Their aim was to return to small-batch whiskey distillation and take a hands-on approach to its maturation.

The key production stages for this single malt are controlled and monitored by hand. The distillery draws its water from its own well. Selecting first-fill casks is an important part of the process: they are intended to give the distillery's own spirit pronounced flavours and body.
