Malted Teacake is the fifth limited release in the experimental Huntress series and was bottled in January 2026. It originated in Nc'nean's 2022 brewing yeast trial. Alongside Anchor and Fermentis, Nc'nean used Dubbel Trouble, a yeast developed for Belgian ales that produced aromas of dried fruit, fig jam and sweet malt during fermentation.
Eleven bourbon and STR casks filled with the experimental spirit were married with three older casks from the classic Nc'nean recipe that had been filled in 2017. Most of the whisky in this release is three to four years old. The final cask composition is 50% STR red wine casks, 48% bourbon casks and 2% Oloroso casks; the casks were filled between August 2017 and September 2022.
This organic Highland single malt was bottled at 48.5%, with a release of 4,391 bottles containing 0.7 litres each. It retains its natural colour and is non-chill-filtered.
Its creamy, malty profile combines buttered toast, freshly baked cake and fig jam with a rich, buttery texture. Dried fruit and crème caramel complement the baked-goods character, while a delicate minerality contrasts with the sweetness.
Tasting Notes:
- Nose: The nose reveals figs, pastries, sultanas and apricots.
- Palate: Freshly baked cake, dried fruit and crème caramel come together on the palate.
- Finish: The medium-to-long finish is malty and lively.
Distillery/Bottler:
Nc'nean is an independent organic whisky distillery on Scotland's west coast. Its founder, Annabel, began establishing the distillery in 2013; distillation started four years later. Nc'nean released its first whisky in 2020.
The distillery uses unpeated organic barley from Scotland and renewable energy. Long mashing times, slow fermentations and trials with unusual yeasts are integral to its approach. The Huntress series is dedicated to such experiments, and Malted Teacake focuses on the Dubbel Trouble yeast strain trialled in 2022.
